Bacon + Brussel Sprouts Breakfast Hash
Ingredients:
2 cups of shredded Brussel Sprouts
1 cup of sweet potato ribbons from Trader Joe’s
2 TBSP of avocado oil
6-8 pieces of bacon
Directions:
Preheat oven to 400.
Toss 2 cups of shredded Brussel sprouts and 1 cup of sweet potato ribbons with 2 TBSP of avocado oil, salt + pepper.
Roast on 400 for 20-25 minutes.
Remove from oven and set aside.
Heat oven to broil at 525.
Put 6-8 pieces of bacon in the oven for 8 minutes.
Remove and chop bacon and mix with Brussels and sweet potato mixture.
Enjoy by itself or with eggs any way you like them!!
