Bacon + Brussel Sprouts Breakfast Hash

Ingredients:

  • 2 cups of shredded Brussel Sprouts

  • 1 cup of sweet potato ribbons from Trader Joe’s

  • 2 TBSP of avocado oil

  • 6-8 pieces of bacon

Directions:

  1. Preheat oven to 400.

  2. Toss 2 cups of shredded Brussel sprouts and 1 cup of sweet potato ribbons with 2 TBSP of avocado oil, salt + pepper.

  3. Roast on 400 for 20-25 minutes.

  4. Remove from oven and set aside.

  5. Heat oven to broil at 525.

  6. Put 6-8 pieces of bacon in the oven for 8 minutes.

  7. Remove and chop bacon and mix with Brussels and sweet potato mixture.

  8. Enjoy by itself or with eggs any way you like them!!
