Bacon & Chive Potato Salad
Ingredients:
3 cups of potatoes, diced
1-2 TBSP avocado oil
6 slices of cooked @applegate bacon
1 green bell pepper, diced
1 red onion, diced
2 TSP chives
2 heaping TBSP @primalkitchenfoods rosemary garlic mayo
Directions:
Broil potatoes seasoned with avocado oil, salt + pepper on 525 for 10-12 minutes. Set potatoes aside to cool for 10-15 minutes after cooked. I also cook my bacon at 525 for 8 minutes.
In a bowl mix: roasted potatoes, cooked bacon, green bell pepper, red onion, chives, and rosemary garlic mayo. Top with salt + pepper and pair with any meal you want!!!
