Bacon & Chive Potato Salad

Ingredients:

  • 3 cups of potatoes, diced

  • 1-2 TBSP avocado oil

  • 6 slices of cooked @applegate bacon

  • 1 green bell pepper, diced

  • 1 red onion, diced

  • 2 TSP chives

  • 2 heaping TBSP @primalkitchenfoods rosemary garlic mayo

Directions:

  1. Broil potatoes seasoned with avocado oil, salt + pepper on 525 for 10-12 minutes. Set potatoes aside to cool for 10-15 minutes after cooked. I also cook my bacon at 525 for 8 minutes.

  2. In a bowl mix: roasted potatoes, cooked bacon, green bell pepper, red onion, chives, and rosemary garlic mayo. Top with salt + pepper and pair with any meal you want!!!
