Bacon, Zucchini, and Mushroom Breakfast Bake
Ingredients:
1 medium zucchini, peeled and diced
1 cup mushrooms, diced
6 pieces of cooked @applegate bacon
10 @vitalfarms eggs
1/2 cup almond milk
1 cup @birchbenders paleo pancake mix
1/2 cup feta cheese (cheese of your choice)
1/2 TSP baking soda
Directions:
Preheat oven to 375.
Mix all ingredients in a bowl well.
Line an 8x8 baking dish with parchment paper or coat with avocado oil spray. (I recommend the parchment paper so your bake doesn’t stick to your pan like mine did).
Bake for 35-40 minutes on 375.
Stick a knife in the middle — ready when it comes out clean!!
Naturally I topped it with @traderjoes everything but the bagel seasoning + sriracha
