Banana Blackberry Matcha Muffins

Ingredients:

  • 2 eggs, lightly beaten

  • 2 medium mashed ripe banana

  • 1 TBSP unsalted grass-fed butter, melted

  • 1½ cups almond flour

  • ¾ TSP baking soda

  • 1 dash pink salt

  • ½ - 1 cup cut up blackberries

  • 1 TBSP matcha

  • 1 TSP vanilla extract

  • Cinnamon

Directions:

  1. Preheat oven to 350.

  2. Line muffin pan with nine muffin papers and lightly coat with spray. Set aside.

  3. In a medium bowl, mix eggs, banana, and butter. Set aside.

  4. Mix almond flour, baking soda, and salt together in a separate bowl.

  5. Add flour mixture to egg mixture; mix until blended.

  6. Fold in blackberries

  7. Pour batter evenly between prepared muffin cups, ¾ full

  8. Bake for 15-20 minutes, or until golden brown. Stick a toothpick in the center and if it comes out clean, they are ready!

  9. Remove and let cool.
