Banana Blackberry Matcha Muffins
Ingredients:
2 eggs, lightly beaten
2 medium mashed ripe banana
1 TBSP unsalted grass-fed butter, melted
1½ cups almond flour
¾ TSP baking soda
1 dash pink salt
½ - 1 cup cut up blackberries
1 TBSP matcha
1 TSP vanilla extract
Cinnamon
Directions:
Preheat oven to 350.
Line muffin pan with nine muffin papers and lightly coat with spray. Set aside.
In a medium bowl, mix eggs, banana, and butter. Set aside.
Mix almond flour, baking soda, and salt together in a separate bowl.
Add flour mixture to egg mixture; mix until blended.
Fold in blackberries
Pour batter evenly between prepared muffin cups, ¾ full
Bake for 15-20 minutes, or until golden brown. Stick a toothpick in the center and if it comes out clean, they are ready!
Remove and let cool.
