Breakfast Plate
Ingredients:
1 egg
2 pieces of bacon
1 cup of shredded Brussel sprouts
1/2 cup sliced Japanese sweet potatoes (found at Trader Joe’s)
1 TSP of avocado oil
Salt + pepper to taste
Directions:
Preheat oven to broil at 525.
Toss Brussel sprouts in 1 TSP of avocado oil with salt + pepper.
Toss sweet potatoes in 1 TSP of avocado oil with salt + pepper.
For the bacon, Brussel sprouts, and sweet potatoes: line a baking sheet with parchment paper. Place 2 pieces of bacon, Brussel sprouts, and sweet potatoes on the baking sheet.
Broil at 525 for 8-10 minutes.
Fry 1 egg on a stovetop pan.
Top with Everything but the Bagel Seasoning and ENJOY!!
