Breakfast Plate

Ingredients:

  • 1 egg

  • 2 pieces of bacon

  • 1 cup of shredded Brussel sprouts

  • 1/2 cup sliced Japanese sweet potatoes (found at Trader Joe’s)

  • 1 TSP of avocado oil

  • Salt + pepper to taste

Directions:

  1. Preheat oven to broil at 525.

  2. Toss Brussel sprouts in 1 TSP of avocado oil with salt + pepper.

  3. Toss sweet potatoes in 1 TSP of avocado oil with salt + pepper.

  4. For the bacon, Brussel sprouts, and sweet potatoes: line a baking sheet with parchment paper. Place 2 pieces of bacon, Brussel sprouts, and sweet potatoes on the baking sheet.

  5. Broil at 525 for 8-10 minutes.

  6. Fry 1 egg on a stovetop pan.

  7. Top with Everything but the Bagel Seasoning and ENJOY!!
