Chicken Gyro Bowls
Ingredients:
Chicken cutlets
Garlic powder
Oregano
Salt + Pepper
1 cup mixed greens
1/2 yellow bell pepper
1/3 cup roasted potatoes
1/2 cup cucumbers, leave out 3-4 slices for tzatziki
1/4 cup diced tomatoes
1/4 cup red onion
1 cup plain Greek yogurt
1 TSP fresh dill
Directions:
Pan sear chicken cutlets with garlic powder, salt, pepper, and oregano for 6-8 minutes or until cooked through.
Put over a bed of mixed greens with bell peppers, roasted potatoes, cucumbers, tomatoes, red onion, and homemade tzatziki.
For homemade tzatziki mix one cup of plain @siggisdairy with 3-4 cucumber slices muddled, 1 TSP of black pepper and 1 TSP of fresh dill.
