Chicken Gyro Bowls

Ingredients:

  • Chicken cutlets

  • Garlic powder

  • Oregano

  • Salt + Pepper

  • 1 cup mixed greens

  • 1/2 yellow bell pepper

  • 1/3 cup roasted potatoes

  • 1/2 cup cucumbers, leave out 3-4 slices for tzatziki

  • 1/4 cup diced tomatoes

  • 1/4 cup red onion

  • 1 cup plain Greek yogurt

  • 1 TSP fresh dill

Directions:

  1. Pan sear chicken cutlets with garlic powder, salt, pepper, and oregano for 6-8 minutes or until cooked through.

  2. Put over a bed of mixed greens with bell peppers, roasted potatoes, cucumbers, tomatoes, red onion, and homemade tzatziki.

  3. For homemade tzatziki mix one cup of plain @siggisdairy with 3-4 cucumber slices muddled, 1 TSP of black pepper and 1 TSP of fresh dill.
