Cookie Dough Energy Bites

Ingredients:

  • 5-7 pitted Medjool dates, presoaked in water

  • 1 cup of cashews or mixed nuts, presoaked in water

  • 2 TSP vanilla

  • 1/2 cup oatmeal

  • 1/3 cup chocolate chips

  • 1/4 cup maple syrup

Directions:

  1. Mix all in a food processor.

  2. Refrigerate for 30 minutes.

  3. Roll into 18-20 energy bites.

  4. Store in fridge for up to 2 weeks!
