My Go-To Breakfast Bowl

Ingredients:

  • 2 eggs

  • 1/2 avocado

  • Feta

  • 3-4 mini red potatoes, cubed


For the batch of veggies:

  • 1/2 red onion, sliced

  • 1 red bell pepper, diced

  • 1 zucchini, cubed

  • 1 cup butternut squash, cubed

  • 1 cup baby carrots, diced

  • 1-2 TBSP avocado oil

  • Salt + pepper to taste

Directions:

  1. Preheat oven to broil on 525.

  2. Roast diced potatoes on 525 for 10-12 minutes or until desired golden brown look.

  3. Cook 2 eggs over medium on the stovetop.

  4. Heat veggie mixture.

  5. Put it all together in a bowl with 1/2 avocado, a sprinkle of feta, and everything but the bagel seasoning!!

For the veggies:

  1. I make a big batch for the week consisting of red onion, red bell pepper, zucchini, butternut squash, + baby carrots.

  2. Dice up the veggies, toss with some avocado oil and season with pink salt + pepper.

  3. Lay them out on a baking sheet and roast in the oven on 350 for 45 minutes.

  4. Great to add to breakfast bowls, omelets, salads, dinner sides, ANYTHING!!
