My Go-To Breakfast Bowl
Ingredients:
2 eggs
1/2 avocado
Feta
3-4 mini red potatoes, cubed
For the batch of veggies:
1/2 red onion, sliced
1 red bell pepper, diced
1 zucchini, cubed
1 cup butternut squash, cubed
1 cup baby carrots, diced
1-2 TBSP avocado oil
Salt + pepper to taste
Directions:
Preheat oven to broil on 525.
Roast diced potatoes on 525 for 10-12 minutes or until desired golden brown look.
Cook 2 eggs over medium on the stovetop.
Heat veggie mixture.
Put it all together in a bowl with 1/2 avocado, a sprinkle of feta, and everything but the bagel seasoning!!
For the veggies:
I make a big batch for the week consisting of red onion, red bell pepper, zucchini, butternut squash, + baby carrots.
Dice up the veggies, toss with some avocado oil and season with pink salt + pepper.
Lay them out on a baking sheet and roast in the oven on 350 for 45 minutes.
Great to add to breakfast bowls, omelets, salads, dinner sides, ANYTHING!!
