Healthy Lemon Drop Cookies

Ingredients:

  • 1 egg

  • 1/2 cup plain Greek Yogurt

  • 3 TBSP honey

  • 2 TSP of lemon extract

  • 1 TBSP of lemon zest

  • 3/4 cup cassava flour

  • 1/4 TSP baking soda

  • Powdered sugar for sprinkling on top

Directions:

  1. Preheat oven to 350.

  2. Mix together egg, Greek yogurt, honey, lemon extract, and lemon zest well.

  3. Add in dry ingredients to above mixture, aside from powdered sugar.

  4. Batter should be a cookie dough thick consistency that you can pick up with your hands and mold.

  5. Using a cookie scoop or tablespoon form 10-12 cookies.

  6. Line a baking sheet with parchment paper and bake for 9-12 minutes on 350.

  7. Sprinkle powdered sugar on top when they come out of the oven.

  8. I store mine in the refrigerator!!
