Healthy Lemon Drop Cookies
Ingredients:
1 egg
1/2 cup plain Greek Yogurt
3 TBSP honey
2 TSP of lemon extract
1 TBSP of lemon zest
3/4 cup cassava flour
1/4 TSP baking soda
Powdered sugar for sprinkling on top
Directions:
Preheat oven to 350.
Mix together egg, Greek yogurt, honey, lemon extract, and lemon zest well.
Add in dry ingredients to above mixture, aside from powdered sugar.
Batter should be a cookie dough thick consistency that you can pick up with your hands and mold.
Using a cookie scoop or tablespoon form 10-12 cookies.
Line a baking sheet with parchment paper and bake for 9-12 minutes on 350.
Sprinkle powdered sugar on top when they come out of the oven.
I store mine in the refrigerator!!
