Hibachi Bake
Ingredients (makes 4-5 servings):
1/2 cup low sodium tamari sauce
1 TBSP toasted sesame oil
2 TBSP rice vinegar
1 TSP garlic powder
1-2 TSP of corn starch to thicken (optional)
1-2 TSP of ground ginger
1/4 cup water
1 cup diced carrots
1 yellow or red bell pepper (I used yellow today)
1 cup of white onion
1 cup of broccoli
1/2 cup green onion
1 cup cooked brown rice
1 lb. of chicken breasts cut into cubes
Directions:
Preheat oven to 375.
In a saucepan over medium heat mix rice vinegar, tamari sauce, toasted sesame oil, garlic powder, + ground ginger.
Bring to a boil.
Lower to a medium-low flame and whisk in corn starch. Set aside.
Cook brown rice (I use Trader Joe’s frozen brown rice that microwaves for 3 minutes).
Pour cooked brown rice in the bottom of a casserole dish and spread out evenly.
In a separate bowl mix soy sauce mixture, cut up chicken, and all veggies.
Pour chicken and veggie mixture over rice.
Cover casserole dish with tinfoil and bake in the oven for 30 minutes on 375.
Top with sesame seeds after all baked + ENJOY!!
