Lemon Blueberry Protein Bites

Ingredients (makes about 20):

  • 2 scoops vanilla protein powder (I use @sunwarrior vegan vanilla)

  • 3 heaping TBSP of coconut flour

  • 1/4 cup cashews

  • 1 TSP cinnamon

  • 5 dates (soaked in warm water for 3-5 minutes)

  • Juice from 1 whole lemon

  • 1/4 cup pure maple syrup

  • 2 TBSP of melted coconut oil

  • 1/2 cup @paleonola cinnamon blueberry granola (can substitute for granola of choice OR sliced almonds & coconut shreds and a little extra cinnamon)

  • 1/4 cup wild dried blueberries

Directions:

  1. In a food processor add protein powder, coconut flour, cinnamon, and cashews. Pulse until all ingredients are finely blended together.

  2. Add maple syrup, lemon juice, and coconut oil and mix on high for about a minute. This should get your mixture to a doughy like texture.

  3. Add dates one at a time pulsing in between to finely mix the dates into the mix. The texture should resemble raw cookie dough.

  4. Remove from food processor into a bowl and gently fold in (either with a rubber spatula or mixing with your hands) the cinnamon blueberry granola and wild dried blueberries.

  5. Roll into ~20 protein bites and ENJOY!!
