Lemon Ricotta Blueberry Waffles
Ingredients:
6 whole eggs separated yolks and whites
1 cup part skim ricotta cheese
1/2 cup @fourthandheart vanilla Madagascar ghee (can sub butter)
1/2 cup flour
4 TBSP sugar (optional** I used only 1 in my recipe)
2 TBSP lemon zest
1-2 cups fresh blueberries
Directions:
Separate eggs
Mix egg yolks, ricotta, melted butter/ghee, flour and lemon zests
In a separate bowl, whip egg whites to form stiff peaks
Fold egg whites into batter
Add blueberries
Pour into waffle iron — makes 5 waffle iron waffles!!
