Lemon Ricotta Blueberry Waffles

Ingredients:

  • 6 whole eggs separated yolks and whites

  • 1 cup part skim ricotta cheese

  • 1/2 cup @fourthandheart vanilla Madagascar ghee (can sub butter)

  • 1/2 cup flour

  • 4 TBSP sugar (optional** I used only 1 in my recipe)

  • 2 TBSP lemon zest

  • 1-2 cups fresh blueberries

Directions:

  1. Separate eggs

  2. Mix egg yolks, ricotta, melted butter/ghee, flour and lemon zests

  3. In a separate bowl, whip egg whites to form stiff peaks

  4. Fold egg whites into batter

  5. Add blueberries

  6. Pour into waffle iron — makes 5 waffle iron waffles!!
