Lox Lunch

Ingredients:

  • 1 cup arugula

  • 2 slices of smoked Atlantic salmon (I buy mine at Whole Foods)

  • 1/2 cup cooked quinoa

  • 1/4 cup diced tomatoes

  • 1/4 cup diced cucumber

  • 2 TBSP fresh squeezed lemon juice

  • 1 TSP sunflower seeds,

  • 1/2 avocado

  • Fresh dill

  • Everything but the Bagel seasoning

Directions:

  1. Use arugula for the salad base and top with 1/2 cup refreshing summer quinoa mix consisting of 1/3 cup of cooked quinoa, 1/4 cup diced tomatoes, 1/4 cup diced cucumber, 1 TSP of sunflower seeds, a little cilantro and 2 TBSP of fresh squeezed lemon juice.

  2. Add 1/2 avocado, 2 slices of smoked Atlantic salmon, 1 TSP of everything but the bagel seasoning and some fresh dill and EVOO if needed.
