No Bake Cheesecake

Ingredients:

  • 10 @emmysorganics coconut cookies — flavor of choice (my personal fave used here are the lemon ginger and the dark cacao cookies!!)

  • 1 container of @so_delicious coconut cool whip (9-ounces)

  • 1 8-ounce package of cream cheese, softened

  • 1/4 cup sugar

  • 1 TSP vanilla extract

Directions:

  1. Press 1 @emmysorganics cookie into a cupcake wrapper (for this recipe the filling will fill 10 mini cheesecakes)

  2. Mix/whisk the cream cheese, @so_delicious coco cool whip, vanilla, and sugar until well blended together.

  3. Evenly fill 10 cupcake wrappers with the @emmysorganics cookie already pressed to the bottom of the wrapper.

  4. Freeze for 30-45 minutes.

  5. Enjoy these bites topped with crushed graham crackers or fresh strawberries!!
