The Perfect Poached Egg

Ingredients:

  • 1 egg

  • 1 slice of Ezekiel bread, toasted

  • 1/2 avocado

  • Handful of arugula

  • 1 TBSP of feta

  • 1 TBSP of green onions

  • Everything but the Bagel seasoning

  • Sriracha

Directions:

  1. Bring 1 quart of water to a boil.

  2. Place egg in egg poacher. Drop poacher in boiling water. Cook for 4 minutes.

  3. Flip poacher after 4 minutes and cook for another 4 minutes on other side.

  4. Remove from poacher to add to toast.
    *Note: 8 minute cook time is for a drippy poached egg

  5. Plate 1 slice of Ezekiel bread toasted & topped with 1/2 teeny tiny avocado, a handful of arugula, a drippy poached egg, feta, green onions, a sprinkle of everything but the bagel seasoning, and some sriracha.
