One Pan Wonder - Salmon, Roasted Potatoes, + Bok Choy

Ingredients:

  • 1 piece of salmon, I generally cook a 6-8 oz. piece

  • Blackening seasoning

  • 1/2 bag Bok Choy from Trader Joe’s (about 2 cups)

  • 1/2 cup sliced or diced red potatoes

  • 1 TBSP avocado oil

  • Salt + pepper to taste

Directions:

  1. Preheat oven to broil on 525.

  2. Season salmon with blackening seasoning.

  3. Toss potatoes in 1/2 TBSP of avocado oil and season with salt + pepper.

  4. Toss bok choy with remaining 1/2 TBSP of avocado oil and season with salt + pepper.

  5. Line a baking sheet with parchment paper.

  6. Place salmon, potatoes, and bok choy on baking sheet.

  7. Broil on 525 for 10 minutes.
