One Pan Wonder - Salmon, Roasted Potatoes, + Bok Choy
Ingredients:
1 piece of salmon, I generally cook a 6-8 oz. piece
Blackening seasoning
1/2 bag Bok Choy from Trader Joe’s (about 2 cups)
1/2 cup sliced or diced red potatoes
1 TBSP avocado oil
Salt + pepper to taste
Directions:
Preheat oven to broil on 525.
Season salmon with blackening seasoning.
Toss potatoes in 1/2 TBSP of avocado oil and season with salt + pepper.
Toss bok choy with remaining 1/2 TBSP of avocado oil and season with salt + pepper.
Line a baking sheet with parchment paper.
Place salmon, potatoes, and bok choy on baking sheet.
Broil on 525 for 10 minutes.
