No Bake Salted Caramel Brownies

Ingredients:

For the brownie base —

  • 2 cups of unsalted walnuts

  • 8-10 dates

  • 1 TBSP coconut oil

  • 1/2 cup @navitasorganics cacao powder

For the caramel layer —

  • 1/2 cup @georgiagrinders peanut butter

  • 3 TBSP maple syrup

  • 1 TSP vanilla extract

  • 1 TBSP coconut oil

Directions:

  1. In a food processor blend walnuts on high for 1-2 minutes until finely chopped. Add dates 1-2 at a time until texture becomes sticky. Add coconut oil and cacao powder. Blend together so all ingredients are mixed well and texture should be a sticky, fudge like batter. Line an 8x8 baking dish with parchment paper and press brownie base firmly into dish. Place in the freezer for 15 mins.

  2. While the brownie base is freezing heat a medium saucepan and combine PB, vanilla extract, coconut oil, and maple syrup. Stirring mixture frequently for 5-8 minutes until mixed well. Remove pan from heat and let cool.

  3. Pull brownie base out of freezer and add caramel layer. Top with flakey sea salt and put back in the freezer for another 10-15 minutes.

  4. Take out to cut into 9-12 pieces!! Store in the refrigerator if eating within the week, freezer for up to 2 weeks (trust me these probably won’t last you more than 2-3 days if we’re being honest
