Spinach, Egg, + Cheese Breakfast Flautas

Ingredients:

  • 2 siete foods cassava flour tortillas

  • 2 eggs

  • 4 cups of spinach, raw

  • 2 TBSP feta cheese

  • 1 TBSP avocado oil

  • 1 TBSP garlic ghee

  • Optional: avocado and hot sauce for topping

Directions:

  1. Add 1 TBSP of garlic ghee to a pan and cook spinach until wilted.

  2. In the same pan, add 2 eggs and feta cheese. Scramble eggs in with spinach mixture. Set aside.

  3. Heat a cast iron skillet on high heat with 1 TBSP of avocado oil.

  4. Add 2 tortillas to soften - only needs about 15-30 seconds; until bendable.

  5. Divide spinach, cheese, and egg mixture into each tortilla and roll up tightly.

  6. Place tortillas in the heated cast iron skillet. Cook for about 30-45 seconds rotating 4 times total. Tortilla should be golden brown around.

  7. Plate and serve with avocado, hot sauce, and a sprinkle of cheese and red pepper on top!
