Spinach, Egg, + Cheese Breakfast Flautas
Ingredients:
2 siete foods cassava flour tortillas
2 eggs
4 cups of spinach, raw
2 TBSP feta cheese
1 TBSP avocado oil
1 TBSP garlic ghee
Optional: avocado and hot sauce for topping
Directions:
Add 1 TBSP of garlic ghee to a pan and cook spinach until wilted.
In the same pan, add 2 eggs and feta cheese. Scramble eggs in with spinach mixture. Set aside.
Heat a cast iron skillet on high heat with 1 TBSP of avocado oil.
Add 2 tortillas to soften - only needs about 15-30 seconds; until bendable.
Divide spinach, cheese, and egg mixture into each tortilla and roll up tightly.
Place tortillas in the heated cast iron skillet. Cook for about 30-45 seconds rotating 4 times total. Tortilla should be golden brown around.
Plate and serve with avocado, hot sauce, and a sprinkle of cheese and red pepper on top!
