Sweet Potato Taco Bowls
Ingredients (serves 4):
1 lb. lean ground beef
2 medium zucchini, diced
2 red bell peppers, diced
1 red onion, sliced
3 TBSP of @chosenfoods avocado oil, divided
4 small sweet potatoes (I buy the microwave in a bag ones from @publix )
Taco seasoning (I will post my homemade taco seasoning as well Incase y’all make a jar of your own for multiple uses!!)
Pico + avocado optional
Directions:
Preheat oven to 375
Mix zucchini, bell peppers, and red onion with 2 TBSP of avocado oil, salt + pepper
Roast mixed veggies on 375 for 40-45 minutes or until tender
While veggies are cooking heat 1 TBSP of avocado oil in a sauté pan and add ground beef and 2 TSP of taco seasoning. Cook beef through.
Microwave the sweet potatoes according to directions on steam-able bag (7-9 minutes)
Build your plate!! I topped mine with pico and some avocado on the side. You can also add shredded cheese as well!!
