Tofu Summer Salad

Ingredients:

  • Handful of mixed greens for the base

  • 1/2 cup raw, diced zucchini

  • 1/2 cup diced red bell pepper

  • 1/2 nectarine lightly grilled

  • 1/2 avocado

  • 3/4 cup of crispy tofu

  • 1 TSP of pumpkin seeds

  • Extra virgin olive oil

  • Turmeric balsamic vinegar

  • Salt + pepper to taste

Directions:

  1. Salad base: mix together handful of mixed greens, zucchini, red bell pepper, grilled nectarine, + avocado.


To make the tofu crispy:

  1. Heat pan with 1 TSP oil on medium high heat

  2. Evenly lay out cubed tofu

  3. Cook for 8 minutes covered and do not touch

  4. Remove lid and toss around consistently for another 8-10 minutes or until golden brown.

  5. Add to salad base and top it off with 1 TSP of pumpkin seeds, EVOO, turmeric balsamic vinegar + cracked pepper!!
