Tofu Summer Salad
Ingredients:
Handful of mixed greens for the base
1/2 cup raw, diced zucchini
1/2 cup diced red bell pepper
1/2 nectarine lightly grilled
1/2 avocado
3/4 cup of crispy tofu
1 TSP of pumpkin seeds
Extra virgin olive oil
Turmeric balsamic vinegar
Salt + pepper to taste
Directions:
Salad base: mix together handful of mixed greens, zucchini, red bell pepper, grilled nectarine, + avocado.
To make the tofu crispy:
Heat pan with 1 TSP oil on medium high heat
Evenly lay out cubed tofu
Cook for 8 minutes covered and do not touch
Remove lid and toss around consistently for another 8-10 minutes or until golden brown.
Add to salad base and top it off with 1 TSP of pumpkin seeds, EVOO, turmeric balsamic vinegar + cracked pepper!!
