Loaded Veggie Chili

Ingredients:

  • 1 lb. ground beef

  • 1 yellow bell pepper

  • 1 orange bell pepper

  • 2 zucchini

  • 1/2 white onion

  • 1 clove of garlic

  • 1 can of tomato sauce

  • 1 can or kidney beans

  • 1/4 cup green onions

  • 1 TBSP avocado oil

  • 1 TSP oregano

  • 1 TSP cumin

  • 1 TSP chili powder

  • 1 TSP red pepper flakes

Directions:

  1. Start by chopping all veggies into small cubes/pieces and drain kidney beans.

  2. In a medium saucepan heat avocado oil with white onion and garlic until translucent. About 3 minutes.

  3. Add in ground beef with oregano and cook until cooked through.

  4. Add in cumin and all chopped veggies and let cook for 5-7 minutes.

  5. Then add chili powder, tomato sauce and beans.

  6. Continue to cook on medium heat stirring frequently for about 10-15 minutes.

  7. Add red pepper flakes.

  8. Turn to low-medium heat and let cook for about 30 minutes.

  9. Serve with avocado, guac, cornbread, chips, or by itself!!
