Loaded Veggie Chili
Ingredients:
1 lb. ground beef
1 yellow bell pepper
1 orange bell pepper
2 zucchini
1/2 white onion
1 clove of garlic
1 can of tomato sauce
1 can or kidney beans
1/4 cup green onions
1 TBSP avocado oil
1 TSP oregano
1 TSP cumin
1 TSP chili powder
1 TSP red pepper flakes
Directions:
Start by chopping all veggies into small cubes/pieces and drain kidney beans.
In a medium saucepan heat avocado oil with white onion and garlic until translucent. About 3 minutes.
Add in ground beef with oregano and cook until cooked through.
Add in cumin and all chopped veggies and let cook for 5-7 minutes.
Then add chili powder, tomato sauce and beans.
Continue to cook on medium heat stirring frequently for about 10-15 minutes.
Add red pepper flakes.
Turn to low-medium heat and let cook for about 30 minutes.
Serve with avocado, guac, cornbread, chips, or by itself!!
