Zoodles Pad Thai
Ingredients:
1/2 red bell pepper
1/4 red onion
1/2 cup zucchini spiralized
1/2 cup butternut squash spiralized
2-4 chicken tenders
1 TSP of peanuts
2-4 TBSP of The New Primal almond butter turmeric dressing
1 TBSP avocado oil
Salt + pepper
Directions:
Slice bell pepper and red onion into small strips to fill approx 1/2-3/4 cup.
In a saucepan heat 1 TBSP of avocado oil and sauté pepper and onion mix for 3 minutes.
Add in 1/2 cup spiralized butternut squash and 1/2 cup spiralized zucchini.
Add 2-4 TBSP of @thenewprimal almond butter turmeric dressing and sauté for about 15 minutes or until veggies are tender.
While all is sautéing put a few chicken tenders in the oven to bake for 8-10 minutes on 350 seasoned with salt + pepper.
Take out and cut into pieces to add to your veggie pad Thai.
Once all is cooked removed and add a few crushed peanuts for some extra crunch + ENJOY!!
