Zoodles Pad Thai

Ingredients:

  • 1/2 red bell pepper

  • 1/4 red onion

  • 1/2 cup zucchini spiralized

  • 1/2 cup butternut squash spiralized

  • 2-4 chicken tenders

  • 1 TSP of peanuts

  • 2-4 TBSP of The New Primal almond butter turmeric dressing

  • 1 TBSP avocado oil

  • Salt + pepper

Directions:

  1. Slice bell pepper and red onion into small strips to fill approx 1/2-3/4 cup.

  2. In a saucepan heat 1 TBSP of avocado oil and sauté pepper and onion mix for 3 minutes.

  3. Add in 1/2 cup spiralized butternut squash and 1/2 cup spiralized zucchini.

  4. Add 2-4 TBSP of @thenewprimal almond butter turmeric dressing and sauté for about 15 minutes or until veggies are tender.

  5. While all is sautéing put a few chicken tenders in the oven to bake for 8-10 minutes on 350 seasoned with salt + pepper.

  6. Take out and cut into pieces to add to your veggie pad Thai.

  7. Once all is cooked removed and add a few crushed peanuts for some extra crunch + ENJOY!!
